Friday, 25 July 2014 | 02:22 | 0Comment Hello again. Raya is coming up really fast and one of the most essential parts of raya is definitely the cookies! (other than new clothes and raya money of course *wink*) This gardenia cookie or also known as biskut bunga cina in malay is probably the only raya cookie I love and can eat a whole jar of it :P I found this recipe online. My mama told me to look for recipe that has sweetened condensed milk in it because that is the traditional way of making this cookie. Gonna make it tonight because we would be leaving for kampung tomorrow. Could really feel the raya spirit right now. :)
Gardenia Cookies
Ingredients:
250 grams butter (softened to room temperature)
½ tin sweetened condensed milk
100 grams tapioca flour
450 grams cornstarch
1 teaspoon vanilla extract
Chocolate chips or cherry bits
Direction:
Preheat the oven to 165 degrees celcius.
Combine butter and milk until throughly mixed. Do not
overmix or the cookies will expand in the oven.
Sift the tapioca flour and cornstarch together and add into
the butter and milk mixture a little at a time. Mix just until combined.
Put the cookie dough into a piping bag fitted with a star
nozzle and pipe onto a greased cookie sheet so the cookies kinda resemble the
flower.
Put the chocolate chips or cherry bits in the middle of
the cookie as the flower’s pistil.
Bake for 15 to 20 minutes or until the cookies turn
slightly golden brown.
